Recipe for SIMA, Finnish May Day drink: 4 litres of water, 250g brown sugar, 250g white sugar, 1-2 lemons, 1/5 teaspoon yeast, raisins
Mix the sugars and boil half the water. Mix the sugars and the hot water. Add the rest of the water and the rest of the lemons. Add the yeast when the liquid is at body temperature. Add slices of lemon and let the sima rest covered for one or two days. Bottle the sima and adda few raisins and one teaspoon of sugar to each bottle. The sima is ready to drink when the raisins start to float – this will take 3 – 7 days
